Lemon Yogurt Muffins.

Still remembers my trip to Sultan of Science Exhibition at Petrosains, KLCC? Well, that morning, don't know whether Mamarazzi too excited or what, but she just can't sleep after waking up at 3.30am. That's the witching hour is it?

She tried to read some story book but hungry pulak.....thought of Auntie Elin's lovely Cranberry muffins.


 No Cranberry in the fridge but found a Lemon, raisins and a tub of yogurt which Papa and me asked Mamarazzi to make but didn't eat.

A fast google found recipe for Lemon Yogurt Muffin but as usual she did not follow the recipe exactly

She put :-

  • 2 cups of self rising flour
  • 1/2 cup sugar
  • agak agak 1 tablespoon of grated lemon peel
  • two teaspoons of baking powder
  • 1 egg
  • 1 cup of yogurt. Mine was Vanilla and peach.
  • juice from half a lemon
  • half cup of Vegetable oil
  • some raisins
Method :-

  • Beat the eggs, sugar, yogurt, lemon juice, oil and grated lemon peel till it's well mixed
  • shift in the self raising flour and the Baking Powder 
  • fold every thing well  and add the raisins.
  • bake in the oven for about 20 minutes at 170°C



First batch turns out not so nice. Not moist enough. Must be not enough eggs.

She added one more egg into the remaining batter.

 
 Second batch turns out great.

 Taste...a bit too sour but great with a cup of Kopi O and a good book.

  4. Looks delicious... I'd love Lemon Yogurt Muffins --but I'd also love the Cranberry ones!!!!! Sounds fabulous! Makes me hungry.. ha

Good morning mamarazzi, miss reading your blog... last few days mello blog kena hacked hahahah so bad i cant blog 3days till i report to google only can blog again... anyway the muffins looks yummy thanks for sharing the recipe it looks easy to made but i dont know if i can make it hahaha i will give it a try then.. :D have a nice day ahead.

  8. You taught me Banana Muffins and I made it 3 times! It got better each round after knowing that I could adjust the colour by using the right fermented bananas! So now I am pondering whether to try this since I love lemons!!! Yummy!

  9. I am seriously looking into making muffins as gifts after seeing the crazy prices for one piece!!! I have bought so many cute muffin boxes but I have not even started yet. I am lazy to bake!

  14. By using yogurt in the muffin, the texture turns out to be moist n fluffy. I love this. Next time can try orange yogurt muffins.

    1. i always say mamarazzi is forever creative and spontaneous when it comes to baking, she doesn't like following strictly the recipe but have fun with whatever she has on hand..

  20. I have never tried such combo of flavors but surely the outcome is fabulous. Thanks for the idea. Maybe when I find more time, I will try out this recipe.
