Papa says its easy.
Hence the other day when she saw the durian seller in the Pasar Malam selling tempoyak, she bought one container. RM5.
Bought a bunch of Daun Kesum. People also call it daun laksa. English name is Vietnamese mint, Vietnamese cilantro, Cambodian mint and hot mint.
One bunga kantan(Ginger flower), Kunyit(tumeric) , cili padi (birds eye cili) and asam keping
Lovely looking bunga kantan after sliced in two.
One patin fish.
She blended the kunyit and cili padie together. the according to the recipe. Put three tablespoon of tempoyak into the pot with the blended ingredients. Add a bit of water. Dump in the Kantan flower and the daun kesum with the fish. Cooked till boiling......then....this where it gone wrong.
why the gravy won't thicken??? so watery leh and tasted super sour though she didn't even add in the asam keping. Added some more cili padi and some salt...still taste like something is missing...
Oh well....eat asam fish la if like that....but even asam fish also failed...that's story is for next week la....
Till now she still scratching her head where the heck did it gone wrong???
A friend suggested maybe the Tempoyak was too old hence too sour...and Mamarazzi put in too much water to cook it.
Nevermind, I don't like to eat that spicy yellow dish anyway. I preferred these.. Yellow sweeeeet Nangka...yummmm.....Kaw Kaw LC , you want? I eat on your behalf ya....
I have my kitchen disasters too, sometimes it can't be explained but the dish is missing with flavors.
ReplyDeleteYea that's is...follow recipe as close as possible and yet....sigh...

ReplyDeleteBut mine was missing some thing...not enough taste
DeleteI had both thick and non thick ones both tasted okay with me....
ReplyDeleteI luv Gulai Tempoyak Ikan Patin but could not eat too much tempoyak coz it will make my tummy bloated, dunno why... It's sinfully delish nonetheless...
ReplyDeleteWell, there's always a 2nd time for trail and error... Keep on improvising, Meow... =D
Ciz of thd durian la...got "angin"
Deletethis is the tips that you should consider if you cook ikan patin gulai tempoyak... just blend chili with kunyit and then ketuk serai 3-4 batang... put all of the ingredients in the periuk then put tempoyak... mix it. if you like thick soup then add another tempoyak. if it is too sour just put sugar there. but it is very nice you just put new tempoyak, it taste sweet... then after you think that your kuah will be thick enough, just cook it with slow fire. put some salt and taste it... (don't need kantan and daun kesum)...
ReplyDeleteOoo like that ya...
DeleteI've asked a friend and she saud maybe it's due to the tempoyak.
First time making so lesen L . Lol .
Thanks for the tips, Sofiah
Add sugar?
ReplyDeleteNo wor....
DeleteWhen buying tempoyak also need to look for nice tempoyak meow.
ReplyDeleteSome vendor add other things in the tempoyak and it's not all pure durian hence different taste.
Ya ka....didn't know. Thought it's all the same :-(. Then should have bought from the ikan oatin stall in temerloh thevother day. That one surely is good one .
Deleteaiyoh, tempoyak ah?? i learned this from STP's post actually, errr, of course i have to pinjam his signature comment "no, thank you"!! haha, anything durian, please take them away from me and don't come near~~ :D
ReplyDeleteWakakaka...later he charge you tuition fees
Deleteaiyoh poor patin fish!! i can see his head chopped off and the eye staring at mamarazzi!! perhaps it was sending a message to mamarazzi "must cook me into a nice dish okay, else i'll look for you in your dreams!!" hahaha.. :D
ReplyDeleteChoy! Choy! Choy! I'll tell the fish go haunt you. ..lol
Deletehahaha, must ask Sibu Food Mayor why yours didn't succeed lah.. again, mamarazzi improvised inside the kitchen inventing new dishes from the classic ones!! fuyoh, so we call this what?? assam tempoyak ikan patin instead?? :D
ReplyDeleteSure bankrupt if I open stall...fusion gulai tempoyak
Deletepractice makes perfect lah.. i am sure your gulai tempoyak will be perfect the next round, then small kucing doesn't need to substitute that with the nangka already~~ go go go!! we have confidence with mamarazzi :p
