Mamarazzi's No Bake Lego Lunch Box Bailey's Cheese Cake

The farewell dinner was supposed to be potluck. Papa said why not make Cheese Cake as almost everyone likes Cheese Cake. But Mamarazzi said no la. Make Loh Mai Farn better la.

But then when she was in the Bakery supplies shop her hands was itchy pulak. Saw the ingredients for the Cheese Cake was rather simple.

Just some Digestive Biscuits (crushed) and mixed it with the melted butter from the frying pan. Chill for some time.

Whip cream, cream cheese ...tarak grated chocolate so she replace with Chocolate chips. Alamak...not enough cream cheese leh...recipe calls for 600gm cream cheese but she only have 250gm....errr....looks like cannot use the 7" pan la...

Korek korek...found my Lego Lunch Box. use that one as "pan" la.

The next day......errrrr.... still not hard like those sold in Secret Recipe. But hentam and cut la.

Not bad looking leh.

Let me try first ah.

Ahhhhhh....

Hmmmm...... how many marks ah...?

The topping and cream good. But I don't like the digestive biscuits. Can replace it with Oreo ka? Would be nicer leh.

For Mamarazzi's No Bake Lego Lunch Box Bailey's Cheese Cake, she used :

Ingredients
- 50gm butter
-120gm digestive biscuits
-250gm cream cheese
-10ml of Bailey
-50gm icing sugar
-150 whipped cream
-100gm chocolate chips
- Cocoa powder to decorate.

Method.
- melt the butter in the pan and throw in the biscuits crumbs
- lined the lunch box with baking paper and put in the biscuit crumbs. Press hard. Chill in the fridge for an hour or till harden
- Whip the cream cheese and add in the Bailey and Icing sugar.
-Fold in the whipped cream and add the chocolate chips.
-scoop out and put into the lunch box
-Put into the fridge to chill some more. Recommended two hours but we ate it the next day so Mamarazzi only dust the surface with Cocoa powder the next day.

Conclusion : Much easier and less expensive to buy Cheese cake from cake shop la. Mamarazzi not good in making cake.

  5. Wow, looks so good.. I love it..

Usually, my ingredients are pretty simple too, for a no-bake lemon cheesecake.. Same like yours, but I used crushed Marie biscuits instead of Digestive biscuits.. Oohh, and I didn't add chocolate chips.. I added lemon juice instead..

Oohh, if you want it to be hard, you add gelatin (dissolved in hot water, then pour into cream cheese mix)..

  11. yeah!! Mamarazzi's baking time!! love that, always so improvising and often so experimental.. i think professional bakers or chefs should read Mamarazzi's baking or cooking post lah, because i think they got things to learn from Mamarazzi for her impromptu style which always create more unique tastes :p

  12. If I'm not mistaken, no-bake cheese cake recipes requires gelatine (or some other setting agent), so that it can set nice and firm. Also, a lot of recipes call for graham cracker crust (you can find graham cookies now), but nothing wrong with Oreo crust...

  13. oh yeah, so in the end was it Loh Mai Farn or No-bake Cheesecake for the farewell dinner?? anyway, probably this cheesecake is even easier to make comparing to cooking the LMF which has so many things to do (errr, you Sang Chao the LMF until cooked or just steam it??).. i think this recipe suits Uncle SK if he ever have a hands-on in the kitchen lah.. haha, just campur everything and done~~ :p

  14. errr, not hard or set enough?? maybe those commercial ones selling in shops add in things like gelatin to firm the mixture, or maybe because of the whipping etc?? hehehe.. kasi hentam cakap aje lah this Uncle SK, as if he is very expert in baking, but in fact never baked at all pun, haha!! but who cares soft or hard lah, that's your style mah, and more important is that even Small Kucing loves it!! and nice suggestion from him to use Oreo biscuit as the base woh.. :)

  15. If you don't like digestive biscuits, you certainly can replace them with oreo. I used oreo sometimes too, but haven't had to chance to write out the recipes yet. Don't be a fussy kid, ok?? Your mom did a pretty good job!

  23. Mamarazzi, if I can afford to eat like you and still so slim, I don't mind baking and having cheese cake like yours. But, because Yannie is easily fat type, so Yannie will give cheese cake a past. Yannie only had cheese cake when Ah Hua baked for Yannie.
