Mamarazzi's "infamous" CKT(Char Keoy Teow)


Papa tried out some CKT around our area and somehow there is something not right to the taste buds. Well....CKT can't be that hard to fry is it? Just dump everything into the wok and krang krang krang and kau tim one plate of CKT , right?
Bought a packet of Koey Teow from the mini market. Alamak....the mini market fella put that in the fridge....all the oil was conjugated (is that the word?? ...soli oh my england ah). *Aha..thanks Mei Yee.. that is the word -  coagulated.*

 after a swim in the water, the Keoy Teow was still one big lump. okay la...add some hot water...alamak.. it became too soft pulak. Oh well, nevr mind...maybe after frying it will turn out okay, right?



Chopped some garlic . Forgotten to buy taugeh(Bean sprout) but replace with carrot lah.

Some Lap Cheong(Chinese sausage) and squid coz Mamarazzi too lazy to peel cockles.

Throw everything into the wok and fry with big fire.....


End result......

Errrrr....can eat ka? Think frying CKT better leave it to the expert la. Not as easy as it seems to be leh. See CKT seller fry CKT in the stalls seems to be a piece of cake but.......looks like everything is also a lesson to learn.

  1. That koay teow itself is very important. I think mamarazzi used the one not suitable for frying so ended up not nice. Did small kucing and paparazzi eat it?

    1. Over here it's short form for Char Keoy Teow. Char kway teow, literally "stir-fried ricecake strips", is a popular noodle dish in Brunei, Indonesia, Malaysia, and Singapore

  5. Haha, why J looks like that? Nice mou mamarazzi's ckt? Oh yes, ckt of coz if bought outside taste better, coz they have enuff "wok hei".. Their fire and wok so big ahh, sure nice lor.. But home-cooked is good too..

    What seasoning mamarazzi put? Black kicap, soya sauce, pepper, somemore? me ahh, if fry mee or kuey-teow, everything more or less the same only.. Garlic, meat, choy-sum or cabbage, throw in the noodles, add soya sauce, wee bit of oyster sauce, wee bit of black kicap, pepper, water, kautim.. Some colleagues teach add some cili boh, but I'm not a fan of cili boh, so no add..

    So J finished the ckt mou?

  6. Looks really good though. nicer than mine. Watch out for mine - post on it coming soon. Will come out of the fridge hard - no need to do anything - just peel and separate the strands and fry - will turn soft soon enough. I know some people steam first, not nice lah like that.

    Yes, the kuey teow we get here is also in the fridge, so it's one big lump before frying too!

  12. wah, Mamarazzi so ambitious thought the CKT is very easy to cook?? hahaha, if everybody also can cook, then those CKT stall also no need to operate lah, but instead we always see long queue at some CKT stalls if they are really nice, and people won't mind waiting (or perhaps kena scolded by rude boss also don't mind).. i think similar to hokkien mee, easy to cook maybe but difficult to make it taste good leh..

  13. wah, conjugated?? errr Uncle SK also tarak tahu, his England is even more London than Mamarazzi lah.. better ask English teachers how to say that.. Mamarazzi must tell the boss that his fridge is too cold lah, until the koay teow also frozen already.. hmmm, maybe use hot water to cooked makes the koay teow taste not so nice and not so easy to cook kot?? why Mamarazzi no use microwave to defrost??

Mamarazzi's cooking time is all about improvising!! no taugeh no kerang, use carrot and squid aje lah.. but then okay woh, Uncle SK thinks the carrot also goes well with the CKT and then makes the CKT looks more colorful and nicer too, presentation deil.. but seems like Small Kucing not so happy with that "infamous" CKT from Mamarazzi woh..

  20. I've had disasters frying kuey teow. You are right; the stall owners made it so simple. Practiced a few times and now I'm ok. Quite tempting version you've made esp with the lap cheong.

  23. If KT put in fridge, is better to thaw it. It will turn soft slowly. U add hot water become sticky.

  28. Mamarazzi, sorry to say that, I don't think carrot goes well for CKT ler! Put bean sprout better ler!

    I don't dare to be so adventurous in cooking, because my hubby and my children don't like weird combination one.

  32. Your CKT looks like the one selling in outside eateries. Not bad wor... I replaces the bean sprout with big onion cause I hate bean sprout so much. I also love to add more fish cakes and eggs. By the way, did Mamarazzi add egg and fried together?

  34. Krang Krang Krang what a nice CKT sound! Mamarazzi is full of vocabs to tickle our ribs!
    I learn this secret from all the hawkers. You need to use very heavy iron wok with strong blowing flames before tossing your Koay Teow in circles. The perfect taste comes from the heat and O2 combined together plus the quality of Koay Teow has to be home made.
