Happy Call Pan - Sambal Grilled Fish in Banana Leaf

Once upon a time~ *LOL* Yea....story continues from the Belitung Island Trip. Uncle Anton gave us whole loads of fishes and Sotong(Squid).

After cooking 2-3x of Chargrilled Whole Squid with Lemon and Black Pepper Mamarazzi got bored. Kinda waste of electricity leh to turn on the big oven just to grill sotong or fish. Why not HCP?

Well, Mamarazzi thought of making those Ikan Bakar that she had during Ramaddan month.  The recipe seems easy enough

 Need some lemongrass. Easy. Just walk over to the playground and get some.


Banana leaf is a bit more difficult. No Banana plant at the playground. Lucky next door neighbour was around. Asked some banana leaves from her. 

 Supposed to used fresh red chilies but tarak. Ours and the neighbour's cili plant also no chili yet. Oh well, just hentam and use the Chili shrimp paste from Tg Sepat la.

Add some shallots, lemongrass, bit of belacan, salt, fish sauce, sugar and some  turmeric powder. Err...supposed to put sume lime but tarak lime...omit la.

 Blend them 

 For the dipping....

 Asam jawa water with thinly sliced shallots and cili padi. Added a bit of toasted belacan. 

 Okay la...Mamarazzi thought she was ready.... put the Banana Leaf into the Happy Call Pan(HCP) . Dump this fish in. And add on the blended paste. Close the pan and start the cooking.

Then she start thinking...hmmm...how come the paste looked so pale ...

Ok ok...refer back to the recipe...

YIKES!!! "Heat up a wok and stir-fry the sambal paste until aromatic" ... ALA-MAKKK..!!! forgotten that step.

Open up the HCP...errr...fish half cooked...take out ....take out.....wash wash....


 Lucky got extra paste....kronk krang krong krang....stir-fried the extra paste. 

 okie okie...in you go....come come...Mama "make-up" a bit your body with the sambal paste ya....

 After 10 or so minutes.....Jeng! Jeng! Presenting........Sambal grilled fish.....!

Mamarazzi claims that it tasted great wor. She didn't even  use the dipping. Just ate the fish with the sambal and rice. 


For me, I better stick to stir-fried squid and steamed eggs la. Safer.

  1. fuyoh, mamarazzi cooking time again!! i like this post, hahaha!! so happening and mamarazzi fully demonstrated her improvise and impromptu cooking, no one can ever beat her lah.. even Jamie Oliver also kalah to mamarazzi under such a situation.. can cook half-way and redo everything, really must salute this mamarazzi!! :D

  2. wah, not bad at all woh.. no need to pre-buy any of those ingredients beforehand, just walk around the neighbourhood to source for them, and then get whatever she has inside the fridge.. how creative, and i actually like this way of cooking lah.. be flexible and don't stick strictly to the recipe, until 0.1g also wanna kira, that would be a bit too over the board lor i think..

    1. Just like the times when we were kids la. Can jalan-jalan cari all the ingredients instead of rushing to the nearest hypermart for the stuff :)

    2. Yup yup...but not many hv time to tanam all these herbs. Now peopl work till night time. Got time also use it to rest la. Lucky next door got elderly lady that loves to garden. Her garden full of herbs and vege. Got kangkung, brinjal, okra, buah delima and whole loads if things. Even hv a traditional herb that say good for itchiness/allergy. Sapu if got like chicken pox . Traditional calamine lotion

  3. actually i think the essence of the grilled fish is in the gravy, the cooking is very simple only lah, just dump everything there to grill.. and mamarazzi not bad woh, knows what to put in to blend, actually can make extra and keep in the fridge for next time mah.. and that dipping also looked very professional lah, really like those sold outside..

  4. wah, looked delicious lah mamarazzi's grilled fish.. but too bad lah, small kucing tarak want to give face also, haha.. this boy really very good ah, all things he eats also very plain and clear one hor?? such a contract to the mommy lah, this mommy everything also want chili, and paparazzi everything also want to have strong flavor.. but then actually must start to train small kucing to eat a bit of spicy food lah, so that he will be more immune to stimulating flavors later, hehe~~ :)

  5. Lucky you that you have good neighbors. Over here except for one or two neighbors, the rest don't even want to get to know me. I love the fish. never mine if the taste wasn't perfect yet its my kind of dish, truly Malaysian.

  8. Oohh, you bought the HCP too? At one time, many people were talking about this HCP.. It can do so many things including baking.. Have you tried baking a cake in this HCP?

    Uiiks, mamarazzi so "tai tau har" geh? Lupa that step, quite important step wor.. Haha, so funny la when I see mamarazzi write why the colour so pale.. Eh at least mamarazzi still realize macam something not right and quickly checkout wat step was missing, keke..

    Eh the fish half-cooked jor you still can scrape the belacan out & wash ahh? Then the isi got terkeluar or not?

      Ya lor..so wu loong also can. See see then think..hmmm why so pale...coz saw in bazaar the paste they put on the fish darker color.

  12. Looks great! For me, I like it raw to just stuff the past into the fish and the fish slits on top and then fry. Of course baking works better as it cuts out the splatter as opposed to frying. Whatever works, I say.

    Steamed egg is also my fav esp when it has salted egg and century egg as well. Yum!

    I remember we bought a HUGE pack of sambal (1 kg) and never used it too.

  23. I have left things out of recipes also at times... NO FUN---but you could 'fix' yours... Bet those fish were delicious. I wouldn't need the dipping sauce either....

  24. Not bad lah. I ever try using flip pan to cook fish once. This recipe sounds easy. Just "hentam" what ever you can find in the kitchen. Haha. Mamarazzi's cooking style.

  30. I always wanted to fry and grill my own fish but never done it in my life cos I felt guilty to look at the fish. I think i must buy the fish parts, that would be okay. Anay damn hati lembut dei.
