Yam Yam Yammy Cake

Last week Mamarazzi was lazy. No idea what to cook for lunch. Aiya...just go to the mini market to buy yam and make "one pot cook all Yam Rice" la.

Sampai(arrived) at Mini Market saw the Yam not so fresh . Rather ugly looking.  Was worried that the Yam might be rotten in the middle as saw some Yam got some mold. Told the staff. The staff said nevermind...asked Mamarazzi to choose the better looking ones and she will give her 30% discount.Hence she bought two...one for back up ....

Came home cut...both Yam also in good condition. Hmmm too much Yam for Yam Rice. Think think think...okay try make Yam Cake la.

Four years ago she made twice and both times failed. First try, the texture came out too hard. Throw at the dog sure the dog will pengsan. Second try...too much water. The "cake" refused to harden at all.

Went digging. Found Elin's Yam Cake Recipe. As you know, Mamarazzi doesn't always follow recipe one leh..hence always kaput....this round well..

Cincai lah...used the remaining Yam and a handful of dried shrimps.

Chopped some garlic...also "agak-agak" tarak follow recipe

Ah...when comes to the batter...she guai guai follow the recipe lo. ....except the  alkaline water...forgotten about that .

For the batter:Mix and strain

300g rice flour
75g tapioca flour
5 cups water
1/2 tsp alkaline water

Before cooking she was chatting with Kor Kor Jon's Mommy in Whatapps and was telling her about Making Yam Cake.

Oh what a lucky break coz it was then she got to know that the batter must be pour into the wok to fry with the rest of the ingredients.

Ya, Elin's had put it in her recipe but you know Mamarazzi la....Mata juling one...never read properly.

While cooking, kept whatapps-ing photos to Kor Kor Jon's Mommy to check is it correct.

Mamarazzi got a shock when she pour the batter into the wok. She did not expect the batter to turn sticky within 2 minutes. Thought would takes longer.

Had to stir it very fast to mix all ingredients with the  batter. Then put into the container to steam for an hour.

Haiz.... forgotten to add pepper......

After an hour...hmm....why still soft ah? Another round of whatapps-ing. Ohh....correct-la. Will only harden after it cool down.

No wonder la people make Yam cake at night and eat as breakfast. So that it can cool down properly.

Another tips she got is that to put the fried onion or garlic(depending on which one you like) topping immediately so that the Yam Cake will continue to be moist while it cool down.

Result.... Papa said Mamarazzi put in too much Yam, not enough dried shrimps and the top is hard. Top layer hard must be due to never cover when letting it to cool.

For me....I think I stick to Yam Rice better lah.

For the CORRECT recipe, do head over to Elin's Blog "Steamed Yam Cake". Don't follow Mamarazzi's "agak-agak" recipe ah.....

Thumbs up to you for attempting all different recipes. Good for your family.

  16. Ahaha... Mamarazzi is just like me. Always suka change the recipe. In the end, frust with the result. The latest I made was the 'bubbles' from tapioca flour. The easiest way, as my friend said. Puuun.... tak menjadi jugak macam dalam recipe. Sigh` I think I just leave it to pro. ;P
