Did you know that we can use watermelon rind for cooking? Mamarazzi didn't know till Uncle Tan mention about watermelon rind can be use to cook curry.
Mamarazzi googled...true enough.......there are plenty recipe on using watermelon rind for a dish.
She waited till we bought a watermelon. She didn't throw away the rind. Instead kept them.
She cooked Watermelon Rind Curry using recipe from Thaitable.com
As you know, she didn't really follow the recipe to the dot.
Bought a fish. Boiled it and peel out the flesh. Mash it.
Blend some shallots, garlic and cili paste
Poured the mixture into the same water that she used to boil the fish. Add in the fish meat.
Add some tamarind water.
Lastly added in the watermelon rinds.
Papa ate some...says....eh...like this add daun limau purut then can become Tomyam liao. Papa did not like the Watermelon rinds but he liked the fishmeat with the soup.
For me...I liked my fried chocken lo.

DeleteMy mother uses the watermelon rind to boil soup too but without any watermelon red or yellow flesh sticking to the rind. The rind tastes like winter melon to me whrn boiled for a long time in the soup - very tasty.

Oohh from the way I see, paparazzi is right, add limau purut or kari leaves and santan can become laksa soup jor.. I also like the fish and soup, bet it taste hoi wai..

My mum sliced and stir-fried the rind before. Nice and crunchy. Good that it's 'free' (otherwise will just throw mah) but rumoured to contain lotsa pesticides. Aiya. Like that should just plant our own watermelon, worst case can just eat the rind. But after attract snakes pulak... aiya give up.

Uncle SK will always just eat the flesh and throw away the watermelon rind, or if not, sometimes being playful, will use the chilled watermelon rind as "facial mask".. just put them on clean face, very cooling and can help to cool down leh..

Deleteactually after removing the skin, Uncle SK thinks the watermelon rind can be just eaten like that leh.. reminds him about the pomelo skin, maybe can also do the same thing?? jemur already then put sugar and can become very nice snacks woh.. Mamarazzi quickly go google and see if this is possible?? :p

Deleteaiyoh, so bad lah, like nobody gave face to Mamarazzi's new creation.. actually Mamarazzi has been putting lots of effort in cooking this woh.. got fish got tamarind somemore, and sure the watermelon rind absorbs all the curry goodness.. Small Kucing so happy, eating his fried chicken while watching both Paparazzi and Mamarazzi "experimenting" the new dish~~ :p
